More about colour, dosing and the photos

We put 3 grams of ube powder in a 250 ml latte. That gives a clearly purple latte with a full ube taste. Stir the powder into a splash of warm milk or water first so it does not clump. A shot of espresso turns the colour browner. Go to our ube latte recipe

Where do these colours come from?

Ube powder is dried purple yam with no colouring added. So the colour depends on what you mix it into. Milk and cream soften it, egg yolk in batter makes it warmer and the oven makes it duller.

We use ube powder every day and matched the colours to what we see in our own kitchen. The photos were made with AI, though. We will soon prepare every dose ourselves, photograph it in daylight and replace the images. Until then, treat everything here as a guide. Your screen plays a part too.

Questions about colour

How much ube powder goes in a latte?

We use 3 grams in 250 ml of milk. That gives a clearly purple latte with a full taste. For a deeper violet, use 5 grams. With 1 gram it turns soft lilac.

Why is my ube not bright purple?

Ube powder is dried purple yam with no colouring. It turns things clearly purple, but never neon. Bright purple shop-bought ube cake or ice cream often contains ube flavouring or colouring. Add a few grams more if you want a deeper colour.

Does the colour change when baking?

Usually a little. The oven makes the purple duller, and a lot of baking soda can pull it towards blue-grey. If you want a real purple after baking, go one dose higher.

Are these colours exact?

No, they are a guide. The colour depends on your milk or cream, the light and your screen. The photos are AI images for now. We will replace them with photos from our own kitchen and adjust the colour codes to match.

Can I put the colour guide on my own site?

Yes. Copy the code below the guide and add it to your page. Please keep the link to Big Moca.
